Blending fruit with fish gives it a taste which children love. This is quick and easy to make and lovely served over a bed of rice.
Ingredients:
- 225 g terikihi, cod or snapper cut into chunks
- Salt and freshly ground black pepper
- Butter or margarine for frying
- 2 bananas
- 10 seedless grapes, peeled
- 15g butter or margarine
- 1 tablespoon flour
- 150ml milk
Season the fish with a little salt and pepper. Sauté the fish in butter or margarine until it flakes easily with a fork. Meanwhile, peel the bananas and cut them in half lengthwise and in half again. Fry them in butter until soft and golden. Combine the fish, bananas and grapes. Make a white sauce in the usual way, season with a little salt and pepper and pour this over the fish. Simmer for 4 to 5 minutes. Serve over a bed of rice. Makes 3 portions.
