Lamb chops baked in a parcel (Recipe by Annabel Karmel)

This is a very easy recipe which seals in all the flavour of the chops. Some children are quite happy chewing meat, especially if they can chew it off a bone.

Ingredients:

  • ¼ small onion, peeled and finely chopped
  • 1 small potato, peeled and cut into small cubes
  • ½ small green pepper, de-seeded and chopped
  • Vegetable oil for frying
  • 2 lamb rib chops
  • ½ teaspoon Marmite
  • 1 medium tomato, peeled and finely chopped
  • Salt and freshly ground black pepper
  • A knob of butter or margarine.

Preheat the oven to gas mark 4, or 180 degrees C. Sauté the onion, potato and green pepper lightly in vegetable oil. Meanwhile, place the chops on a piece of silver foil. Smear each one with Marmite, then cover with the sautéed vegetables and chopped tomato. Season lightly with salt and pepper and dot with butter or margarine. Fold the foil around the chops and bake for 1 hour. Makes 2 portions.
