Bringing these parcels of scrumptious fish to the table will certainly arouse your child’s curiosity. Serve with mashed potatoes or rice. You could use any type of white fish. For another simple but very delicious parcel, take a fillet of fish, sprinkle over 1 tablespoon of chopped spring onions, 1 tablespoon of soy sauce and dot with butter or margarine. Wrap in foil and cook as below.
Ingredients:
- 225g fillets of white fish
- Salt and freshly ground pepper
- 4 medium tomatoes, skinned, de-seeded and chopped or 1 x 400g tin tomatoes, drained
- 50g Cheddar cheese, grated
- 25g cornflakes, crushed
- 2 tablespoons milk
- A knob of butter or margarine
Pre-heat the oven to gas mark 4, 180 degree C, gas mark 4. Place the fillets on foil and lightly season. Mix together the tomatoes, cheese, cornflakes and milk and cover each of the fillets with some of the sauce. Dot with margarine and wrap up into separate parcels (use greaseproof paper instead if cooking in the microwave) and cook in the oven for about 15 minutes or for about 4 minutes on high in a microwave. The fish will flake easily with a fork when cooked. Make sure there are no stray bones, mash the fish together with the sauce, and serve. Makes 4 portions.
