Scarlett’s tasty rice meal (Recipe by Annabel Karmel)

A complete meal for your child which is simple, healthy and very tasty. My two-year-old daughter loves the dish even though she is not keen on eating red meat.

Ingredients:

  • 75g basmati rice
  • 1 onion, peeled and chopped
  • Vegetable oil for frying
  • 225g lean minced beef
  • ½ red or green pepper, de-seeded and chopped
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon tomato puree
  • Salt and freshly ground black pepper
  • 2 tomatoes, skinned, de-seeded and chopped
  • 75g frozen peas
  • 175ml chicken or vegetable stock
  • 120ml pure apple juice

Cook the rice in boiling water until tender. Drain well. Sauté the onion in the oil for 2 to 3 minutes. Add the minced meat and cook, stirring until browned. Add the pepper, parsley, tomato puree and light seasoning and cook for another 3 to 4 minutes. Add the tomatoes and frozen peas, pour over the stock and apple juice, cover and simmer for about 15 minutes. Stir in the cooked rice 5 minutes before the end of the cooking time. Makes 3 portions.
