Chicken drumsticks are fun for your child to hold and eat. Simply wrap the ends in foil and they can be eaten either hot or cold.

Ingredients:

  • ½ small onion, finely chopped
  • Margarine or oil for frying
  • 1 teaspoon lemon juice
  • 2 teaspoons malt vinegar
  • 1 teaspoon brown sugar
  • 2 tablespoons tomato puree
  • A few drops of Worcestershire sauce
  • Salt and freshly ground black pepper
  • 2 chicken drumsticks

Saute the onion in the margarine or oil until soft, then stir in the lemon juice, vinegar, sugar, tomato puree and Worcestershire sauce. Simmer gently for 3 to 4 minutes and season lightly. Remove the skin from the drumsticks, make 2 deep cuts in each and brush all over with the sauce. Place on a piece of foil and cook under a pre-heated medium grill for about 20 minutes, turning frequently and basting with the sauce. Makes 2 portions.
