This is a good recipe to prepare with your child for a special occasion.
Ingredients:
- 175g digestive biscuits
- 40g butter or margarine
- 150ml boiling water
- 65g lemon jelly
- 100g good quality plain chocolate
- 225g cream cheese
- 50g castor sugar
- 2 eggs, separated
- Cocoa powder for decoration
Crush the biscuits in a food processor. Melt the butter or margarine and stir into the crushed biscuits. Line an 18 or 20cm cake tin with baking parchment and press the crumbs down evenly over the base.
Pour the boiling water over the jelly and stir until dissolved. Set aside to cool then put in the fridge until it just begins to set. Melt the chocolate and then beat the cream cheese with the sugar, egg yolks and melted chocolate. Whisk the egg whites until stiff. Fold the semi-set jelly into the chocolate mixture together with the egg whites. Pour over the biscuit base and put the cake in the fridge to set. Sift cocoa powder just before serving.
