These jelly boats are the most popular party food that I make. I usually make them using packets of fruit jelly, but you can also make them using fruit juices. Try blackcurrant, apple, grape or fresh orange juice sweetened with a little sugar. Another idea is to make lime, peach and strawberry jelly in tall glasses and set them one after the other in three layers. You end up with traffic light jelly.
Ingredients:
- 2 large oranges
- 1 x 11.7g (approx 1 tablespoon) sachet gelatine
- 500ml fruit juice
- 1 sheet of rice paper
- 8 cocktail (toothpick) sticks
Cut the oranges in half. Squeeze out the juice without breaking the skin and carefully scrape out the membrane and discard it (keep the skins). Heat a little of the fruit juice in a saucepan, sprinkle over the gelatine and stir, making sure it dissolves completely. Stir in the rest of the fruit juice.
Fill each orange half with the jelly mixture and add some of the prepared fruit if you like. Make sure that the oranges are filled right to the top. Refrigerate until set and cut the oranges in half again (using a wet knife). Cut triangles out of the rice paper and secure with cocktail sticks to make sails.
